SPOKANE, Wash. - Pig Out in the Park kicked off it's 33rd year in Spokane today. Dozens of food vendors serving just about anything fried and greasy you can think of set up their booths at Riverfront Park. This weekend's event is also the grand opening for Stoakley Lloyd's new food truck business, "Phat Truck."It's located in a prime spot at the end of the park right next to the music stage."I'm a little terrified this being our first day, but I think we'll be good," said Stoakley Lloyd, owner of Phat Truck. "It's going to be a lot of fun."Stoakley is a substitute teacher in Spokane, but he and his two cousins are thinking big, and they invested in something a little more exciting."I've been seeing the food truck thing on TV, seen a couple trucks around town," said Lloyd.The three entrepreneurs plan to move to the streets of Spokane for their new full-time jobs after this weekend. They can't think of a better place than Pig Out in the Park to announce to Spokane they are here in town, and show off the incredible food they can make.
